Prepare apples (8-10) by washing and drying thoroughly. Place apples in fridge after removing stems and putting a popsicle stick into each of them (cold apples help caramel to set harder).
1 1/3 cup evaporated milk
1/2 cup light Karo syrup
2 cups sugar
In medium saucepan stir the above ingredients over medium heat constantly until it reaches the soft ball cook stage. If using a candy thermometer it should be 240 degrees F. (Or test by placing a small amount of mixture in ice cold water and forming into a soft ball that slowly flattens out when set on counter top).
Remove from heat and stir in the following ingredients:
1 Tbsp of butter
1 tsp of vanilla
Caramel is ready to dip apples in. After dipping in caramel, apples can be rolled into any additional topping. Some of our favorites are chocolate chips, nuts, sprinkles, toffee bits, crushed oreo cookies. Sometimes our kids don't eat a whole apple, so we just dip apple slices in the caramel and then into our favorite toppings.
